5 Ingredient No Churn Black Tea Ice Cream

Jump to Recipe

In my ever evolving quest to find recipes for our friends and fae, I often wander across dishes that I know the characters in our favorite fairy tales {perhaps I should say the very REAL fairy tale characters *ahem*} would love. While I typically look into the fairy tales themselves for the bulk of my inspiration {see Belle's Candied Rose Petals}, occasionally a dish in the modern world is just as magical. Sometimes, in my travels beyond the enchanted forest, I come across a dish  that I am so utterly delighted by that I just know I have to find a way to "fairy-fie" it for all of you.

Enter, the dessert of the summer - homemade no churn ice cream. Now, I am not sure about you lot, but my castle does not have an automatic ice cream maker. Matter of fact I do not think that you could even import a machine like that to this side of the veil {apparently they are apparently very loud}.

In an effort to bring this warm weather treat to both realms, I have found the afore mentioned no churn ice cream. This is - dare I say - even creamier than many of the versions you may be used to, and it is so easy that you'll want to make an infinite number of ice cream combinations! The basic method is to take a few cups of whipping cream, whipping them up into stiff peaks, then folding in a can of sweetened condensed milk, and a pinch of salt. You freeze up the mixture overnight - et voila! You have the creamiest, most luscious ice cream known to fae kind. You'd probably swear it was magic if I did not, in fact, just tell you how simple it was to make.

This is - dare I say - even creamier than many of the versions you may be used to, and it is so easy that you'll want to make an infinite number of ice cream combinations!

Now, to fairy-fie this, instead of simply giving you all basic ice cream, I took a gander about my tea cupboard and decided to make things interesting. What you have before you today is a milk tea ice cream using our beloved “Once Upon a Time” black tea with swirls of luscious hazelnut spread throughout. It is DELIGHTFUL! First, the Cinderella inspired tea, hits you with notes of hazelnut and smooth vanilla cream, and then the chocolate hazelnut spread freezes into this delightfully fudgy, almost chocolate bar like texture.

Details:

Ingredients:

  • Heavy whipping cream
  • Sweetened condensed milk
  • Once Upon a Time {Cinderella inspired black tea}
  • Flaky sea salt
  • Hazelnut spread (optional)

Kitchen Tools:

To make this ice cream you'll need a mixing bowl, a {hand or stand} mixer, a cup measurer, strainer, and a sauce pan, along with a can opener and a rubber spatula. Also, a bread pan, or deep pie dish works really well for storing your frozen confection, and an ice cream scoop is a must!

Steps:

Step 1: Make the milk tea base

In your sauce pan heat up 2 cups of heavy whipping cream over medium-low heat. Stir in a 1/4 c. of Once Upon a Time black tea and let it steep for 5 minutes. Strain into your mixing bowl, and allow it to cool in your fridge for 2-3 hours.

Tip: Be sure to press on your tea leaves as you strain them to get as much flavor as possible in your milk tea base, and cut the cooling time in half by popping your mixture in the freezer and checking periodically to see if it's cold.

Step 2: Whip and fold the ice cream mixture

Once your heavy whipping cream base is cold whip it with your stand or hand mixer until stiff peaks form. Next, fold in 14 ounces of sweetened condensed milk and a pinch of flaky salt. Optional step - once everything is fully combined, stir in about 2/3 c. of hazelnut spread. Be sure not to fully combine the spread in the ice cream mixture, you should see thick ribbons throughout.

Tip: No need to fold in the sweetened condensed milk in increments, simply mixing it all in with the salt at once will be just fine, the ice cream base is very forgiving. Just be sure to be gentle as you fold everything together.

Step 3: Freeze and serve your ice cream

Pour your ice cream mixture into your preferred container {ideally metal or ceramic, we used a metal loaf pan}. Simply the ice cream freeze until firm, so for at least 6 hours. Scoop into vintage tea cups {because why not} and enjoy!

Total Time 7 hours
Serves 6
Skill Level Easy

Ingredients

  • 2 cups Heavy Whipping Cream
  • 1/4 cup Once Upon a Time {Cinderella inspired black tea}
  • 14 oz of Sweetened Condensed Milk
  • 1 tsp of flaky sea salt
  • Optional: 2/3 cup Hazelnut spread

Instructions

  1. In a sauce pan stir together heavy whipping cream and Once Upon a Time, and let them steep over medium-low heat for about 5 minutes.
  2. Strain the mixture into a large mixing bowl, being sure to press the tea leaves into the strainer to get out as much liquid as possible. Allow this to cool completely in the freezer for about 30-45 minutes.
  3. Using an electric mixer, whip the cream in a large bowl until stiff peaks form, 5-8 minutes. Fold in the sweetened condensed milk and salt until fully combined.
  4. Fold in the hazelnut spread to create a swirl, making sure not to combine fully.
  5. Transfer to a 9×5 inch loaf pan. Cover and freeze until firm, at least 6 hours. Let the ice cream sit at room temperature 5–7 minutes, then scoop and enjoy!

A note from our castle kitchen

Serve with chopped hazelnuts, chocolate shavings, or fresh fruit such as strawberries or bananas!

This would also make an excellent tea affogato, just add one scoop into a tea cup and top with freshly brewed Once Upon a Time black tea.
