How to Make Sugared Rose Petals
Friends and fae,
I am most excited to bring you this recipe in honor of our newest tea "La Belle" and Belle herself, our newest friend.
As you know this particular princess has an affinity for roses, they represent a connection to her family and some of the most beautiful roses are grown on the Beast's castle grounds.
While it would be incredibly easy for Belle to commission a famed pâtissière to supply her with a seemingly endless array of candied rose desserts. However, she prefers to make them herself, and eat them plain or alongside chocolat chaud. She cooks for the Beast, and her loved ones upon occasion, after having developed an affinity for it while preparing meals for her family when they lived in their humble country home.
So without further ado…
Sugared Rose Petals
Ingredients

Fresh organic roses, pesticide free

1 large egg white
-
Granulated sugar, as needed for coating
Equipment
-
Small clean paintbrush or pastry brush

Plate or parchment-lined tray

Small bowl for sugar
Instructions

Prepare the petals
Gently remove petals from fresh organic roses. Inspect each petal carefully and remove any insects or debris. Lay the petals flat on a clean plate. -
Coat with egg white
Lightly whisk the egg white until slightly loosened but not frothy. Using a clean brush, paint a thin, even layer of egg white onto one side of a rose petal. -
Sugar the first side
Sprinkle or gently dip the brushed side into granulated sugar until evenly coated. -
Flip and repeat
Carefully turn the petal over. Brush the second side with egg white and coat again with sugar. -
Dry the petals
Place each sugared petal in a single layer on a parchment-lined tray or plate. Set in a cool, dry place away from humidity. Allow to dry for 24 hours. -
Check for doneness
After drying, the petals should feel firm and crisp, not soft. They should resemble delicate, crystallized candy.

Storage
Store in an airtight container in a cool, dry place. Consume within one week for best quality.
