Instructions: Steep for 3 - 7 minutes in 170 – 185˚F / 76 – 85˚C water

Tea Story
Since as early as 1000 BC, mermaids have enraptured humankind with their mysterious, sirenic charms and unfathomable beauty. I have long wished to create at least one blend inspired by these enchanting beings, and I thought, why not begin with the single most beloved of all mermaid fairy tales, The Little Mermaid by Hans Christian Andersen.
To bring this blend to life, I had to answer a most important question: what do mermaids eat? In my research, I discovered that they enjoy delicacies foraged along the coastlines of the waters they call home, as well as the bounty found beneath the ocean’s waves. As The Little Mermaid is a Danish fairy tale, I looked to the coast of Denmark, and was delighted by what i found. There are bilberries, smaller and far more tart than their North American cousin, the blueberry, alongside honeysuckle, whose taste is akin to a single dew-drop of honey.
To complete the tea, I wished for our friends and fae to know at once that they were sipping a mermaid-inspired blend, hence the addition of butterfly pea flower. Its delicate floral notes pair beautifully with the peony white needle tea.
